How to Make Simmered Lemongrass (Thai Style)
Ingredients
- lemongrass stalks
- galangal or ginger
- kaffir lime leaves
- shrimp or prawns
- mushrooms
- cherry tomatoes
- fish sauce
- lime juice
- Thai chilies
- cilantro
- evaporated milk (optional, for creamy version)
Instructions
- In a large pot, bring 4 cups of water to a boil
- Add 2-3 lemongrass stalks (bruised and cut into 2-inch pieces), 4-5 slices of galangal or ginger, and 4-5 kaffir lime leaves
- Simmer for 5-10 minutes to create a fragrant broth
- Add 1-2 tablespoons of Thai chili paste and stir well
- Add 8 oz of mushrooms (halved) and 1 cup of cherry tomatoes (halved)
- Simmer for 2-3 minutes until the mushrooms start to soften
- Add 1 lb of peeled and deveined shrimp or prawns and cook for 2-3 minutes until they turn pink
- Season with 2-3 tablespoons of fish sauce and the juice of 2-3 limes, adjusting to taste
- For a clear version, serve as is. For a creamy version, stir in 1/4 cup of evaporated milk
- Garnish with fresh cilantro leaves and sliced Thai chilies before serving.
