How to Make Baked Salmon (International Style)
Ingredients
- salmon fillets
- garlic
- lemon
- olive oil
- butter
- fresh herbs
- asparagus
- cherry tomatoes
- salt
- pepper
- bread for serving (optional)
Instructions
- Preheat oven to 400°F / 204°C (200°C)
- In a small bowl, mix 2 tablespoons softened butter, 2 minced garlic cloves, 1 tablespoon lemon juice, 1 teaspoon lemon zest, and 1 tablespoon chopped fresh herbs (dill, parsley, or thyme)
- Pat salmon fillets dry with paper towels
- Place salmon fillets on a lined baking sheet, leaving space between each piece
- Spread the lemon-garlic paste evenly over the top and sides of each salmon fillet
- Trim the woody ends from asparagus spears and arrange them around the salmon
- Add cherry tomatoes to the tray, scattered between the asparagus
- Drizzle the vegetables with olive oil and season everything with salt and pepper
- Spray the salmon with a light coat of oil spray for better browning
- Bake for 12-15 minutes until the salmon reaches an internal temperature of 125°F / 52°C (52°C) for medium doneness
- The asparagus should be tender but still slightly crisp, and tomatoes should start to burst
- Transfer to plates and serve immediately, optionally with toasted bread to soak up the juices from the burst tomatoes.
